AFTER SCHOOL CHEF SERIES
These after school cooking classes are held from 4:30 to 6:30 and can be taken individually or on a continual weekly basis.

        SERIES I - 
        Every Day Cooking Fundamentals

The goal of this four part series is to teach kids fundamental techniques needed to prepare a variety of basic meals. 
Along the way we stress kitchen and food safety, knife skills and proper use and care of cooking tools. 
Each class will begin with instruction on the recipes, understanding the ingredients, measurements and procedures. 
The menus are designed to stress fresh ingredients and kid-friendly flavors.  Students eat the dishes they prepare.

Class 1 - Salad and Veggie Basics   -   These young chefs will learn to clean, prepare and cook vegetables and
make a fun tasty side dish recipe.  We’ll then make a mixed and composed salad with homemade dressing. 
Fresh Vegetable Pizza; Stir-fried Chicken and Vegetables; Salad of Mixed Greens, Carrots, Raisins and
Sunflower Seeds with homemade dressing

Class 2 - Soups and Sandwiches Basics   - The second part of this series introduces kids to homemade
soups, sandwich wraps and grilled panini.  We’ll make two different soups – stock based and cream based
that demonstrates the key steps to making flavorful soups.  They then will be able to create their own ‘lunch’
with two fun alternatives to the usual sandwiches.  Matzo Ball Soup, Creamy Cheddar & Broccoli, Chicken
Quesadilla Wraps, Chicken Salad Panini

Class 3 - Sautéing and Grilling Basics - There are many meals that beginner cooks can master using these
two basic cooking methods.  Both are great for quick meals and because it can be applied to chicken, beef,
pork and fish, it is also versatile.  Your junior chef will be cooking you fabulous dinners in no time! 
Homemade
Grilled Veggie Burgers, Shrimp and Vegetable Kabobs with dipping sauce, Sautéed Chicken and Mushrooms
with an Herbed Pan Sauce.


Class 4 - Dessert Basics
In this session we’ll dig into sweet treats like fruit pie, frosted cake and gooey cookies. 
We’ll teach the importance of accurate measurements and following a recipe.  They’ll learn the building blocks
of classic desserts and satisfy their sweet tooth in the process
.  Chocolate Layer Cake with Vanilla Icing;
Flourless Peanut Butter and Chocolate Chip Cookies; Apple Cobble; Jazzed-Up Fruit Salad

                                 Healthy and Delicious Series

In this series we will explore how can we appreciate the value of what food offers. 
What does healthy mean? How do we benefit?
And how can we experience fresh, clean tastes that are better for us.

 Class 1 - Breakfast    It's the most important meal of the day – so let’s teach these young Chefs to embrace
this opportunity to create new healthy dishes from traditional recipes.  Clear Conscious Waffle with Blueberry Sauce;
Spinach & Feta Frittata; Yogurt Parfait

Class 2 - After School Snack-   Many kids get home from school and they grab the first thing they can eat. We want to challenge them
to prepare healthy alternatives.  Each of these snacks are sure to be a hit because they are fun
to make, delicious and easy!  Mini Calzones; Radish/Cucumber Crisp Bread; Hummus and Vegetables;
Cheddar Apple Melt

Class 3 - Fruit    -   Broiled Mango; Tea Scented Mandarin Oranges; Cinnamon Baked  Apples; Grilled Peach Sundaes

Class 4 - Dinner  -Almond Crusted Chicken Fingers,  Crab Cake Burgers,  Oven Fries (Sweet Potato and/or Yukon Gold

Baking and Pastry Art Series

What is more satisfying than creating a delicious dish that looks beautiful and can be gifted.  
Desserts are the perfect food which lends itself to enjoying personally and sharing with others.  
We will experience the sights, tastes and aroma of freshly baked sweets in this series so get 
ready to love this class!
 
Class 1 - Pies & Tarts – These young Chefs will receive clear, step-by-step instructions ensuring
that you don’t have to be a culinary genius to make melt-in-the mouth pie dough.
